      I started working at the Lighthouse Bistro Pub and Restaurant in Nanaimo as a prep-cook in early 1985, I then followed the Chef who worked there to work at Miller's Landing Sports Pub, I learned quickly how to run a kitchen and staff, soon I was the Kitchen Manager/Head chef for the Company for 3 yrs.. I then went to the Windward Pub, Nanaimo, BC until I was offered a position to run a kitchen in @ Chaser's Lounge, a small Fitness Lounge in Nanaimo, BC. for about one year. I went back to the Lighthouse Bistro next and was welcomed back with open arms. I worked there as Sous Chef and took the place as Kitchen Manager/Chef until they found a more prominent Chef with papers. I still remain friends with the previous owner Leo Therrien. I decided to go back to school in 1993 "University of Vancouver Is"​ to brush up on my cooking techniques. I graduated with honours. I was hired by a restaurant just after Graduating from Cooking School by a restaurant named " Zeta's Café, Nanaimo ,BC a very up and coming Lunch & Dinner Bistro. I was soon promoted to being the Day Kitchen Manager, I did all the ordering and inventory for the whole restaurant. I was laid off after 1.5 yrs .I went back to the Lighthouse to work full time as Sous Chef, it was not long after this I decided to change my direction.1998-1999 worked part-time for 1 yr. at Sears Health Foods, Nanaimo, BC., I had Top Sales of all Part Time employee's at that time. The business soon closed.
