The Deputy Manager was responsible for the day to day running of the hotel, with specific duties relating to the Food & Beverage operation, which entailed being responsible for the gross profit of all food and drink outlets, plus ensuring a high standard of presentation and hygiene. During this period there were several occasions when the hotel had no General Manager and the Deputy had to take over.
