      Hostess: I would greet people as they came into the restaurant. If it got too busy I would write down the customer's name, how many were in their party and asked them kindly to wait outside since it was a small place. While waiting, I would give the customer a menu form, which is where they would write down their order. The restaurant had this way of ordering since it was too compact and too busy to have the standard 'tell your host/hostess what you'd like to order'. Expo: I would stand next to the cooks and when an order form came in I would shout out the customer's order and anything the customer would not want in their order. We did it this way to keep the quick pace and atmosphere going. The customers would usually get their order in about five minutes or less, depending on how busy the restaurant was. Busser: I would have to buss the dirty dishes after the customers left, wipe down the table and then shout to the hostess/host that that table was clear. Some days there would only be two of us in the front of house, so often times we both would have to do two jobs at once. I would have to be Hostess and busser or expo and busser. This job kept me very busy and I love the busy life.
