    I headed a team of 8, and was responsible for all production, including wort production on a pair of 50hl brewhouses (one for wort up to 16P, the other up to 25P) and a 15hl manual brewhouse, all fermentation and maturation including centrifuge, and all packaging into cans (an 11 fill head, twin seam ABE Lincan 65), keg and cask. I was also responsible for all raw materials, QC, recruitment and packaging materials procurement.Brew York expect to brew 10,000hl in 2021. I oversaw Brew York’s transition from a much smaller brewery and revamped all procedures, protocols and record keeping to bring a big brewery mindset to a rapidly expanding organisation.

    Consultancy for new brewery opening with responsibility for brewery specifications, tendering and appointing supplier, design brewhouse layout and liquid / gas flow lines in physical brewery. Responsible for building brewhouse, fermenter chiller and glycol lines, mill and auger, and RO system. I also designed all production processes and routines, and specified and ordered all process control technical equipment.

    Responsible for all aspects of cellaring, fermentation, filtration & wort production. Comfortable with automated and manual brewing, transfers, centrifuges, monitoring of fermentation, yeast management and pitching, CIP (both automated & manual), duotank use, DE/powder and Suprapak filtration, management of carbonation and dissolved oxygen levels, nitrogen use, haze testing, pH and gravity testing, and the odd bit of engineering as necessary.Meantime brew on a 100hl (90 US bbl) Rolec system, aiming to complete 30 brews a week. I'm also experienced at brewing on Meantime’s 12.5hl (10bbl) manual pilot brewery, designing my own recipes to hit ABV, IBU and EBC targets, and calculating mineral additions to water.I hold a UK forklift licence.

    Also Fantasy Garage Ltd. I founded these companies with the aim of providing motoring in ‘interesting’ cars (Ferrari, Aston Martin, Porsche, Bentley, Maserati etc) on the roads of Scotland. We started with 6 cars in 2002, and at the point the business was sold, operated over 20. One specialises in one-off hire, the other annual membership for Edinburgh locals. I was responsible for all day to day running of the business, including accounts, HR, VAT, sales, website construction, marketing, PR, customer relations, undertaking mechanical work, parts sourcing, purchase and sale of assets. These companies were sold in 2012.
