I served as President for the 2014-2015 academic year, as the Nutrition Club. I noticed flaws in participation and professionalism within the club, so I was a key player in the transition from Nutrition Club to the Student Nutrition and Dietetic Association. I expanded roles from President, VP, Treasurer, and Secretary to also include a Marketing Coordinator, Volunteer Coordinator, Social Media Representative, Culinary Chair, and Nutrition Education Chair.- Planned guest speaker events with Registered Dietitians or relevant persons in the health field- Planned professional development sessions related to Internship Matching and DICAS- Created and offered volunteer opportunities for students within the Oak Park River Forest community and in surrounding neighborhoods- Implemented monthly on-campus nutrition education tables that provide relevant nutrition information and healthy snacks/drinks- Collaborated with DU Dining Services and the OPRF Food Pantry in the "Surplus Project," which packages excess food from the dining hall. I received an Internship through Trinity Volunteer Corps as a "partner" to an adult with disabilities. She and I went to Opportunity Knocks, a center for support for adults with disabilities that teaches developmental skills. At Opportunity Knocks, I was the nutrition education leader where I:- Developed a thorough and unique lesson plan each week- Focused on vitamin and mineral intake and education through whole foods- Educated on MyPlate, healthy alternatives, the negative effects of sugary drinks and fast food, etc.Major Project:I worked directly with my "partner" each week to develop one nutrition lesson plan that she had an interest in and that she would present at the end of the year. She chose to educate a separate group of Opportunity Knocks members on the effects of sugary drinks, the benefits of fiber, and conducted a food demo. She has fragile X syndrome, and she showed extreme confidence in her speaking and teaching abilities that day, compared to her normal shy and quiet demeanor. I was responsible for ensuring she knew the correct information, so we worked on what she would say, how she would communicate it, and we practiced questions that members could have for her. Throughout the semester, I worked with her to develop confidence in herself, and it was a proud moment when that ability showed in her.
