In addition to the responsibilities of a Restaurant Sustainability Consultant, I have taken on mentorship of new consultants and the management of several internal tasks. I updated our estimated savings tool and improved the accuracy of dozens of cost savings estimates. I partner with the Sustainability Team Manager to plan and develop tools that optimize the efficiency of our environmental analysis and reduce the time needed for certain analysis steps by up to 75%.

As a Restaurant Sustainability Consultant, I manage a portfolio of over 60 clients with over 180 diverse food-service locations across the country. I analyze documentation from each restaurant to determine the environmental merits of their purchases and practices, create effective reports and other educational material for clients, and customize recommended next steps for each client to best suit their individual location and needs. These recommendations require familiarity with the regional supply chain and local environmental regulations in addition to the specified desires of the client. Each audit reveals unique opportunities for the client to improve energy and water conservation, waste management, and pollution emissions.

As an Intern at Brewery Vivant, I developed a Diversity, Equity, and Inclusion strategy based on the practices of other B-Corp breweries and industry best practice guides. I evaluated the ROI of the solar array based on actual production data and found the original savings projection given by the installer overestimated by thousands of dollars. I then built out a more accurate payback calendar to facilitate better budgeting. I also created a recycling resource for the brewery staff and maintained the website and other internal education documents.

At the Center for Sustainability I updated our social media platforms, trained new employees and students on Zero Waste practices at Aquinas, and planned events intended to engage the Aquinas community in sustainable activities. My biggest annual project involved collecting and synthesizing institutional data for our annual carbon footprint calculator. I also partnered with the Economic department and the Facilities team to implement energy-saving projects paid for by the new Green Revolving Fund. We monitored actual electricity savings to present a Fund payback program to the college CFO.
