Counsel students with food allergy and food intolerances on how to safely eating in university dining centers. This includes conducting annual staff food allergen training to minimize student health risks. Maintains the department’s nutrition data base which includes ingredient, allergen and nutrient data for all food served on campus. Develops menus for both residential dining centers to ensure students have access to a wide variety of options, including but not limited to organic, locally grown, vegetarian, and healthy cuisine. Incorporates on-trend concepts to maintain high meal plan participation. Regularly meets with food brokers and manufacturer’s representatives to evaluate new products.Work with students from the Tufts Sustainability Collective on environmental and sustainability initiatives on campus. Regularly mentor dietetic students from Framingham State University and local hospital intern programs, as well as Community Health students from Tufts. Create annual marketing event calendar for residential dining program to introduce additional excitement and menu variety into dining program. All of this was instrumental in creating a highly respected and recognized college dining program which is ranked repeatedly in the top 20 of US colleges by the Princeton’s Review.
