In 2007, I opened Tom’s Oyster Bar. I was in charge of hiring and training the kitchen staff, setting up the kitchen and developing the menu. Once the dust settled, Tom’s Oyster Bar averaged $54,000.00 a week, running 23% food cost and a 10% labor cost.
