It was an incredibly gratifying experience to see the restaurant emerge from the sawdust and split tiles to become celebrated as one of the best new restaurants in Canada. I began work early in the design phase of Fayuca alongside the Partners, Designer and Contractor. Beginning with their early imaginings, I helped reify a bright, new conception of Baja Cuisine and a modern, unique Yaletown dining experience. A new restaurant is a project: - I began consulting regarding layout of bar fixtures, equipment needs and helping the designer build-in functionality to many different aspects of the space, beyond just the Bar. - Procured and facilitated the proper installation of all manner of bar equipment from ice and espresso machines; refrigeration and water filtration; all the way through to stylish and design oriented Bartender's gear and glassware. - Designed menus, process flow of bar stations, setup of ordering protocols, inventory management and tracking.- Executed hiring and training all staff for service, POS Setup, ordering and stock take systems, weekly GM duties, and brand partnership maximization.- Delivered an talented and experienced replacement.

La Mezcaleria presented a new challenge for me. I began working with a new staff and new set of partners when I began, under the guidance of a talented Bar Manger and GM team. In this time, I greatly expanded my knowledge and love of mezcal and, indeed the category of Agave spirits as well as Mexican cuisine.I took over for one of the most talented and diligent bar managers I have worked with and was tasked with improving upon his achievements. In this regard, I believe I can boast:- Expanding brand relationships and sponsorship opportunities; - Streamlining Optimum Control inventory and ordering processes and vetted suppliers to increase profitability; - Maintaining COGS targets, and helping to incorporate inventory management system; - and perhaps most significantly - maintained friendships through the transition from co-worker to Manager and through to present.

- Oversaw the renovation, which transformed a dilapidated cinema into a widely celebrated multi-media performance space in the heart of Vancouver’s Mount Pleasant. - Succeeded in delivering development and operating permits as well as business and liquor licenses by working closely with contractors, architects, designers and city and provincial inspectors.- Developed operating procedures for door and service staff establishing an exceptional focus on customer service. This focus on customer service continues to pervade the Fox, from lighting and sound technicians and security staff.- Was responsible for costing, sales and planning of private and special events. Worked closely with a wide variety of clients to help them maximize their budgets, minimize risks and deliver exceptional events. - Drafted Venue-Client contracts on a case-by-case basis.- Managed a staff of up to 34 people including in house security, audio and visual techs- Managed inventory, procuring stock on the order of 6-10k weekly, generating revenues ranging from 85-130k monthly.
