    Nautilus Catering, was started in the latter stages of the America's Cup 2 in Auckland. I was given a short term contract at the Nautilus Apartments as their In house manager. During that time I started a catering service which extended from the Apartments, to on board catering of yachts and launches. I left New Zealand in 2005 and have been in Australia ever since. I have a fully equipped portable catering facility in Brisbane, and use much of the equipment to supply and cater for the various positions. If I am not employed by another company, I seek work for myself as a Casual / Relief Chef. Have recently completed some short term contracts in Central Queensland, in Mining Camps, Transport Company's, Cattle Stations, and the NT Outback In the last three years I have set up a Cafe and Bar in the Philippines, and also worked as a Project Manager / Chef and Trainer in Jakarta Indonesia. .

Its been an enjoyable experience, and we have developed into a great team. Sad to leave but Asia is calling again !

    ATA, was the Business vehicle for the Management of the Motels in Kaikoura and also the Block of flats. We took over the Marshall Flats in South Bay, cleaned the units up, maintained them and also collected the rents and returned this to the Owner. We took a percentage of the turn over as a Management fee. The Motels were co managed by the owner and myself. and we were able to increase the occupancy from 33% to 65% over the period, Again we took a percentage and also introduced a range of facilities and services which had not been there before. This included meals, bookings, and transport,ATA also became involved with a shuttle bus service that travelled between Christchurch and Picton. When the Backpackers was sold, we moved to Christchurch and ran a transport related business, which included Taxies, Limosines, and a tour company.

    I started a backpackers and bed and breakfast operation on the foreshore of Kaikoura just prior to the whale watching boom period. I took a derelict building, converted it, brought it up to Building and health code standards and successfully operated this with a team of workers. As well as this, I also took over a block of flats and improved the occupancy and profitability for the owner. Following the success of this, I was asked to take over the management of the owner's block of motels 40 units in all and sleeping 120 pax. Together with my team, i raised the occupancy and the profitability of this operation.

I also represented Prentice Hall, America's largest publishing company and when they closed their operation in New Zealand, I sold up and went back to Hospitality.
