Overview

Chef Adam Evans and Suzanne Humphries Evans will open Automatic Seafood and Oysters in Birmingham, Alabama, in early 2019. The restaurant, named for the building’s past life as the Automatic Sprinkler Corporation manufacturing facility, is located in the up-and-coming Lakeview neighborhood of Birmingham. Working directly with local vendors, markets, and fisheries, Chef Evans’ menu will feature simple, high-quality seafood dishes, primarily sourced from the Gulf, where he will focus on bold flavor and classic technique. Working directly with local vendors, markets, and fisheries, Adam will offer a range of dishes beyond those typically expected at local seafood restaurants-for example, fresh caught sardines, seasonal bycatch, and a full service raw bar. Automatic Seafood and Oysters will also feature a selection of land based produce and proteins. Elegant, and classic, the space at Automatic will be an ode to Americana and lend itself to a coastal setting — not speaking directly to one specific body of water or region but drawing inspiration from all shorelines across the country.
