In conjunction with Massey University NZ, I had the opportunity to gain work experience in Singapore. FIRC provides Singapore food enterprises with technical expertise in New Product and Process Development. I worked alongside Massey Academics and FIRC Food Technologists with a number of projects, including: - Development of patent-pending gluten free flour - Impact of Modified Atmospheric Packaging on shelf life - Freeze thaw volume retention of youtiao (deep fried bread) In conjunction with Massey University NZ, I had the opportunity to gain work experience in Singapore. As work experience over a summer break I assisted production of organic and gluten free bread; Mix preparation, Weighing into trays, Proving/Cooking, and Packing. As seen in the accompanying video, it was a fast paced role and very labour intensive. It was essential to maintain a high level of standardization and quality to meet the requirements of the customers - mostly nationwide supermarkets. To ensure fresh product was delivered each day, production commenced late evening and continued through to the early hours of the morning. It was a challenging but rewarding shift, being involved in the full production process. From goods in to goods out and Immediately tasting the success of every batch. Show less
