      Helped launch our busy Soho Steak house in the heart of Hong Kong Central. Specialising in dry aged steak. The Butchers Club was the leading dry aged beef specialist in Asia and the company was expanding rapidly in many countries. I was Head Chef at the Soho venue in Hong Kong "Steak Frites" I was then assigned to Singapore to help set up and run our private kitchen, dry age room and production facility. I was also responsible in developing new SOP's and training manuals for the companies burger restaurant franchises.
