      My group (Food processing) was focus on the formulated and standard of functional/ nutrient supplement/ fortified drinks. We addressed the degradation rate and the efficiency of bioactivity on functional ingredients. We also applied those mathematic parameters on the food processing and then try to retain the ability of functional ingredients and ensure the safety of products. We also set up a pilot-plant to do those research and service.

      We applied the new technology on the making of instant noodles, dehydrated vegetables, semi-moist fruit products, and deep-fried products, such as fried chicken and chicken nuggets. In addition, we also practiced ohmic heating technique to shorten the heating time and to improve the quality of high viscous foods and foods containing large particles.
