Overview
The Persians are the first to appreciate the sturgeon eggs they draw from the waters of the Caspian Sea. But it is only from the 16th century that the consumption of caviar takes a considerable expansion in Russia and then progressively gains the other European countries. It became a favorite dish of the first Russian tsars and conquered its reputation as a rare and luxurious dish, so much so that in 1675, Tsar Alexis 1st declared the imperial monopoly caviar.
