As a full-time PhD student in Laboratory of Food Proteins and Colloids in SCUT.My PhD research focuses on the understanding of the behavior and application of natural surface-active substances (plant proteins and natural small surfactants) in the food, cosmetics and pharmaceutical fields. These natural surfactants (or called biosurfactants), such as steviol glycosides, exhibit remarkable surface activity due to their amphiphilic structures, on one side, and in most cases are also essential bioactive ingredients on the human body, on the other side. Thus, the unique combination of surface properties and biological activity makes these bi-functional natural surfactants particularly attractive in various processings. Therefore, my PhD topics are as follows: 1. Stabilization of interface dominated soft materials (i.e. emulsions and foams) by controlling the interactions between proteins and natural small surfactants (steviol glycosides); 2. Interfaical behaviors (adsoprtion and, linear and nonlinear rheology) of these natural buliding blocks at liquid interfaces;3. The link between the microstructure of these multiphase systems (interface) and their macroscopic properties (stablity, texture, and function). Show less
