During nutrition counseling I practiced establishing rapport, patient confidentiality, motivational interviewing, SCOFF screenings, scheduling initial and follow-up appointments via email, encouraging patients to set and reach weekly goals, differentiating between counseling and education, and writing ADIME notes.I worked remotely with a dietitian who owns a private practice, specializes in GI and oncology, and conducts educational presentations for employers and for dietitian CEUs. I created 3-day meal plans and lists of meal and snack recipes for her clients on low FODMAP, low histamine, gluten free, soy free, and dairy free diets as well as gastroparesis, SIBO and IBS.
