  My Thesis involves utilizing antioxidant-rich by-product from Ontario's apple juice and cider industry as a feed ingredient for dairy cattle. With this approach, the goal is to obtain naturally-enriched value added dairy products with beneficial health effects for the consumer.This involves a working knowledge of SAS software and GraphPad Prism for statistical analyses, performance and interpretation of total polyphenol content and free radical scavenging activity spectrophotometric assays, as well as culturing of and performing assays on mammalian tissue.
