My first foray into the specialty cafe scene, working in Ciel has helped me on my continual journey in my development as a coffee professional. Served Five Senses Coffee, with rotating roster of single origin espresso and filter coffees. I've learned a great deal here thus far, including the proper use of TDS refractometers in dialling in coffee to achieve optimal coffee flavour consistency. Additionally, learned how to efficiently work as part of a team during busy periods. This was the genesis of where my love of coffee came to be. I started out not knowing much about the hospitality industry, but after a while I came to love what the industry and this little cafe are about. Hospitality is quite simple: be hospitable. What I love most about this industry is that at it's core, it's about making sure that every person that enters my establishment, leaves in a better state than when they first stepped in. Over time, my skill increased thanks to a few key mentors. These people pushed me, and inspired me to keep honing my craft. Coffee was not just a consumable, but became a focal point for me to express deep care and love to my customers. Some of the most powerful human interactions I have experienced thus far in my young life have taken place at my time in Cafe Aberdeen; from providing comfort to people who are going through rough seasons in life, to laughing and rejoicing with those that are on the mountain top. The momentum that this provided propelled my interest into the Specialty Coffee Industry. After attending the Melbourne International Coffee Expo (MICE) 2016 for the first time, I realised to a greater degree just how much the humble coffee bean has impacts the lives of both the rich (consumers) and the poor (growers), with Specialty Coffee having great potential and success in breaking coffee growers out of poverty.
