Sylvia has been a well known mentor of child nutrition with college dietetic students in KY. She has also been a valued colleague to several food service directors within our state. I have enjoyed networking with her and gleaming new ideas over the years. Sylvia is passionate and concerned about the future that beholds our schools with the new mandates in school nutrition policy. When I entered this career change about 17 years ago from a hospital setting, she was a Food Service Director that reached out to help and our background with both being registered dietitians created a common ground.

      Traveled nationally to prepare Registry Eligible Dietitians to pass their National Registration Exam to become Registered Dietitians. I was responsible for teaching them how to pass the Foodservice Cost Accounting and Foodservice Operations and MGT portions of the exam. I covered the variety of foodservice calculations that may be on the exam as well as any other information about those areas that we had heard was covered in the exam. These were typically the weakest areas for the majority of participants and I helped them actually understand why they needed to know the information and how to use it.

      I opened the Dietary Department of this new hospital! The majority of the staff had no health care foodservice experience, and less than half of them had commercial cooking experience. Menu planning for both the cafeteria and the patients was my responsiblity, as well as establishing the Diet Order Protocols for physcians to use for Diet Orders. I determined our mission and purpose, work flow, job descriptions, scheduling, training, and developed our Policy and Procedure Manual. It was an experience that was very challenging and rewarding because it all worked well as we began and continued operations! I was very proud that my work experience and all those simulations I had done in my Master's Program had prepared me for actually making it work. I had only planned to be a part time consultant but knew there would be 50-60+ hrs/wk at the beginning with so much planning, organizing and training to be done initially. Within the first 2 months, I was offered a full time position with flexibility to plan my own work schedule to get my 40 hrs done in 4 days as I was almost 2 hrs away from my house. I had only applied for the job because of child care issues I had experienced where I lived. The hospital was in my hometown so I could stay with my parents and they could babysit. I loved the job and it was very satisfying. It was hard to leave even after over 2 years, but my son was getting ready to start school, so I needed to find work close to home again. It was an experience that I am very thankful I have had!
