While as a General Manager, I have always kept the P&L well within corporate guideline. They asked for 1% of actual vs. flash and I was always under .5%. My food cost was at budget or within 1.5% from opening of Rosedale My guest satisfaction scores were in the top 25% of the company. My suggestive sales were #2 in the company and our quality inspections averaged an A according to company standards.
