The University of Virginia Health System Dietetic Internship Program is 10-month comprehensive program with an emphasis on adult and pediatric nutrition support and general pediatrics/PICU nutrition. This internship is accredited by ACEND. As an intern, I was able to carry out several duties during the multitude… Show more The University of Virginia Health System Dietetic Internship Program is 10-month comprehensive program with an emphasis on adult and pediatric nutrition support and general pediatrics/PICU nutrition. This internship is accredited by ACEND. It provides interns with 1,200 supervised practice hours and 250 hours of didactic training in a multitude of areas including clinical nutrition, community nutrition, and food service. As an intern, I was able to carry out several duties during the multitude of rotations. During the clinical rotations, I was able to attend rounds as well as write patient notes (that were approved and signed by RDs), observe and provide nutrition education to patients, and recommend nutrition plans to physicians and other hospital staff. During food service and management rotations I was able to create menus, carry out nutrition analysis of menu items, lead in-service activities with kitchen staff, and develop budgets and business plans. Over the course of the internship, I was able to participate in several community activities as well as a research project.

I was able to help prepare, cook and arrange appetizers, entrees and desserts not only for hospital events, but for larger events on UVA's beautiful campus. During the summers of 2009 and 2010, I was Camp Robbins Health and Wellness Director. I developed and implemented nutrition and health related activities for all campers ranging from age 4 to age 16. Activities included fun nutrition education programs, healthy cooking lessons, yoga sessions, challenging obstacle courses on the field, nature hikes, and more.
