      Professional placement with a popular organic winemaker. A rounded apprenticeship which included experience in the production, bottling, distribution and sales of the product. I choose to do my third year placement with a natural winemaker on a vineyard in the south west of France. Marine Leys has been making wine in the region for six years, initially working with Plageoles, a famous natural wine making family since 1805. After three years she then purchased 5 acres of her own land along with a her house which has an old “Cave” attached to the back. Here is where she vinifies her wine. As Marine vitafies and vinifies her own wine this made for a great placement opportunity. A chance to see natural wine production from start to finish. Natural or Organic wine is wine which is produced in a biodiverse way. No pesticides, herbicides of fungicides are used on the vineyard. Only minerals and natural products are sprayed to defend the vines against pests and disease. This allows for weeds, flowers and fruit tress to grow freely in the vineyard along with a huge amount of insects and animals. When making the wine no yeasts or flavour enhancers are added, only natural yeasts found on the grape skins ferment the juice. At the time of bottling a small amount of sulphur dioxide can be added to reduce oxidation in the wine, Natural wines usually contain a very small amount of sulphites compared to conventional wines.
