Seattle Biscuit Company is a Southern style biscuit Restaurant Sam the owner has been operating as a food truck owner for over 5 years and last year opened up his bricked mortar Restaurant. the menu is locally sourced ingredients made from scratch we operate in an open kitchen so you can watch the action unfold. my responsibility's include setting up the line heating up the gravy preparing waffle batter cooking off bacon assisting with other prep work. Sam and I work the line and the Biscuits with are the main ingredient are baked fresh throughout the day in. small medium batches to control the freshness and quality.

Snout&Co is a Cuban style catering company and food truck that specializes in authentic cuban and southern food the Cuban sandwich is a Miami style pressed Cuban sandwich made to order also offering cuban style mojo pork, black beans, picadillo, and fried plantains everything was made from scratch.My duties included cutting, preparing the bread for service. I also was responsible for loading the truck up for service for example loading the hot boxes and gathering the tools for the truck assist with other prep work as needed. we would head out to different locations for lunch service, I would make cuban sandwiches to order along with other items. Snout&Co also offered catering on and off the truck

I started in August of 2013, quickly worked my way up to Kitchen manager during the following spring, the Innkeeper was a latin Caribbean inspired restaurant specializing in unique dishes such as goat Curry, cuban style picadillo empanada's other unique eats during my time I learned more about inventory cost control menu planning using RSI and dinerware. I also made it my own job to sweep and mop the dining room and bar every other week. I also kept a kitchen cleaning regime for the kitchen staff to follow every night.
