      I oversaw the galley/below-decks spaces aboard an educational tall ship, and I worked with students to prepare their science and social science manuscripts for course completion and/or publication. I managed a professional assistant as well as a rotation of student assistants. My department stocked the ship for up to 7-week voyages at sea, provided 6 meals per day for up to 40 people, taught galley safety, and encouraged students to be contributing parts of something greater than themselves. For two years, I sailed with SEA's Sustainability in Polynesian Island Cultures And Ecosystems (SPICE) program, sourcing local produce in the islands and incorporating the connections between food and culture into the academic curriculum.
