Line Cook

Dec 2012 - Feb 2015
Began working the line as a Sautee cook. When I moved up to the Garde Manger station, I was managing the cold appetizers, salads and helping with dessert plating. The last year I was there saw me creating weekly specials for the Garde Manger station and doing plating design. Began working the line as a Sautee cook. Canvasser Field Manager
-
Oct 2011 - Mar 2013
Began as a canvasser, moved up to Field Manager. As an FM I was responsible for training new hires, managing logistics which included driving myself and other canvassers from the Berkeley Office to other sites in Marin, Sonoma and the East Bay, all while maintaining a competitive weekly quota of new member subscriptions and financial contributions for groups like the Nature Conservancy and the Southern Poverly Law Center. This is where the I received the foundation for my culinary education. I'm ever grateful to Chef Christian Bertrand for the training and support I enjoyed at my first fine dining restaurant job.
