I was responsible for all gastronomy at the Grand Hotel, Hotel Lundia and Hotel Finn in Lund Sweden. Grand hotel in Lund is a classic 83-room landmark hotel in the south of Sweden with a mayor F&B department. The hotel have two restaurants, a deli shop and a large conference and banqueting operation. The bistro “Gambrinus”, a very classic all day dining restaurant with traditional Swedish brasserie style food and the Grand Dining room, a modern Nordic style cooking restaurant with one of the best wine cellars in Sweden. The Dining room has three annual guest Chef weekends with international top chefs per year, a much appreciated and fun experience for both guests and staff. The Grand Deli shop is small Deli with a large number of pre packed dishes for take away, local ingredients and cook wear. I was responsible for all outlets and in charge of all F&B operations, HR, concepts, design and development and took the dining rooms and private dining trough refurbishment. Hotel Lundia is a one of the first design hotels in Sweden with 90 rooms. Re-developing its french bistro service, room service, breakfast and deli grab and go concept. Hotel Finn is a 80 room long term stay hotel, started in 2013 aiming mainly for business travelers within science and university sector in Lund, this due to the building of the particle accelerator project for the EU. I established a qualitative grab and go concept with cold and hot deli dishes. Show less
