The business currently has 18 brasseries with one more opening in early 2017. Our strategic aim is to grow Brasserie Blanc to 30 restaurants in the next three years.Currently, three operations managers and three area chefs report directly to me in this role and I am a member of the Executive Board for the Group alongside Chef Patron, Raymond Blanc.I look after all key supplier relationships for the brand and am ultimately responsible for the delivery of budgeted EBITDA, the strategic direction of the brand and the people within it.We are committed to providing world class hospitality and training in beautiful restaurant spaces of character. The pubs in my estate deliver turnover of £10m+ with 180 staff in affluent, commuter belt towns. White Brasserie Co is one of the UK's fastest growing pub groups delivering industry leading average pub EBITDA. We currently operate 11 pubs nationwide and intend to open at least another six in the next 12 months. Our food-led pubs have full size kitchens that cook fresh, seasonal food on site. The units currently generate turnover of £14m with 250 staff and largely comprises of the former Chez Gerard estate acquired by the Group in 2011. The London estate includes the iconic 'Opera Terrace' site in Covent Garden piazza, one of London's highest volume full service restaurants. Further sites are located on Threadneedle St, Southbank, Charlotte Street, Chancery Lane, St Pauls and Tower Hill.
