Conducted extensive research in the area of consumer behaviour and sustainable food. The title of my thesis is "Consumer attitudes to sustainable food". The research was carried out using quantitative methods including Structural Equation Modelling. Presented at the Irish Academy of Management's Annual Conference. Presented a paper on "What do consumers understand sustainable food to be?" in 2021. In 2022, I presented my paper on "Consumer perceptions of the convenience of sustainable food" in Trinity College Dublin. Participation in the 'Hear to Help' Peer Support Initiative as part of a Covid-19 response initiative coordinated by the Teaching and Learning Centre, IT Carlow. This initiative centred on supporting undergraduate students from across the Institute in terms of addressing their academic, pastoral and socially-related concerns. Coordinated and facilitated, in conjunction with the Institute's Teaching and Learning Centre, a CPD session for staff in Carlow College based around the experiences of implementing and operating a student-led peer support initiative.
