  As part of our training, we're expected/encouraged to get experience with other dairy production processes. I got fairly f'ing lucky that Thise took me on. So I'll be here for the next 12 months and then its back to cheesemaking at Mammen. In the meantime it's a good honest day's/night's work that also includes “monitoring” the sensory qualities of buttermilk straight from the churn and of freshly churned butter with flakes of sea salt ... which is to die for.
