      Support Plant Manager in running the Blue Cheese plant. This included filling in for the quality manager while they were on leave. In that capacity I prepped the plant for and successfully passed a BRC (third party) audit. I eliminated sanitation violations and revised and updated the HACCP program of the plant. When the production manager left I successfully ran the production department, planning production levels and staffing needs, learning the different processes on the floor, hiring new employees and when needed letting the underperforming ones go. When plant improvements were needed, I planned construction projects and equipment purchases. This included obtaining bids and replacing a roof over the intake area, installing and writing a procedure on how to run a fines saver system and obtaining new forklift and pallet truck equipment to increase plant efficiencies. I also took part in warehouse expansion planning. I oversaw the maintenance and cheese aging departments. In maintenance I set priorities on the most pressing projects and maintained a consistent budget. In cheese aging I managed cheese inventory levels within the caves system, meeting customer demands and producing award winning aged Jeff's Select Gouda, St. Mary's Gouda, Fini Cheddar and St. Pete's Select Blue cheeses.
