Peter is an exceptional Head Chef and really brought a new sense of passion and innovation to Sunley Conference Centre, and during my time there was always enthusiastic about aligning his culinary output with the commercial aspirations of the unit. We needed new thinking, and we got it in both his dishes and his way of working. What struck me most about Pete was his brilliant leadership skills - within a very short time of his arrival his brigade was totally loyal to both him and the organisation - that takes some doing in a new team. Pete worked hard to make the catering team more inclusive, and earned the respect of the other teams within the business. In an era of shouty chefs that nobody wants, Pete was and I am sure still is the sort of Head Chef catering establishments should cherish.I should also add that he is a thoroughly decent bloke.
