The manufacture of margarine spreads involves the dispersion of water droplets within a crystallised fat complex and stabilisation using polymers and/or proteins. The reduction of fats and improved use of natural emulsifiers and stabilisers is critical to product development. This project was a scoping initiative to determine groups of natural compounds that could be further investigated for further research. Completed and published a project investigating the effect of degassing sample water from a sample stream of boiler water from a gas-fired power station. Typically sample water contains significant levels of dissolved carbon dioxide that has a great effect upon conductivity measurements. By removing the carbon dioxide, a more accurate measurement of conductivity and hence impurities can be obtained.
