Chef Gomez is capable of high level detailed quantity production that would stifle most hotel chefs. He makes no concessions for quality, and still makes time for his passion with sugar & chocolate work. I don't think he's realized that I'll be better at pastry work since I've made it a point to look over his shoulder.
