I was also in charge of hospitality & culinary management, OH&S, HACCP implementing, front and back of house operations, purchasing & stock control, weekly and daily functions, menu development, major events preparation, team building/training/supervision, client and management liaison, safety/sanitation/quality controls, optimum ordering system, theme night menu development and healthy eating plans.

I worked closely alongside the national executive chef. I also assisted and helped in organizing competitions for the chef forum for Sodexo Ireland covering about 40 kitchens nationally. During this time I had got to work with celebrity Chef Kevin Dundon, Michelin Star Chef Derry Clark and Executive Chefs for Sodexo prestige from London and Scotland.
