  Life Sciences DepartmentResearch project: CheeseBoard2015: Selection of starter/adjunct cultures for optimum flavour production in half-fat, low-salt cheese (Project funded by Department of Agriculture, Fisheries and Food under the Food Institutional Research Measure [FIRM]).• Evaluated cheese making characteristics of established and novel cheese starter cultures with specific reference to production of half-fat and reduced salt cheddar-type cheese. Validated selected/recommended starter cultures in pilot scale trials in an optimised half-fat reduced salt Cheddar-type cheese matrix. • Assessed favourable starter strains in lab-scale half-fat and reduced salt cheddar-type cheese trials. Made final recommendations for the most advantageous S-LAB strains. Valued microbiology and enzymology of optimised matrix half-fat and reduced salt Cheddar-type cheeses.
