With Café Vert, our focus lay on setting up a circular system in which oyster mushrooms are grown on used coffee grounds. In most cases, used coffee grounds still end up in general trash or landfills. To prevent this waste, we started collecting the used coffee grounds and giving them a second or even a third life. For their second life, the coffee grounds were used as an oyster mushroom cultivation substrate. In their third life, the coffee grounds were further vermicomposted into fertile soil.
