      Green Zebra is a healthy convenience store start up on a mission to increase access to healthy food. They wanted to define, develop and expand their catering program My role was to take the emerging catering offerings that they had, assess the operational challenges and marketing opportunities, implement a new program and identify technology that would grow this part of the business. Before the pandemic hit, I was on track to more than double our catering sales and I was working closely with our teams to help manage the challenges of the additional workload and ensure the quality of our services.       I created and taught a fun series of cooking classes for a small group of elderly, economically disadvantaged residents at a low income apartment complex. We worked together to cook nutritious, simple recipes based on some of the ingredients that residents received in their food boxes.       Chefstable Catering creates event experiences comparable to a high end Portland restaurants for groups ranging from a 10 person lunch to a banquet for a thousand. They took over operations from Catering At Its Best. Besides offering seasonal and delicious food, they also have the ability to leverage their relationship with ChefStable restaurants to create a unique experience serving select signature dishes from these restaurants in an event setting. I worked with clients and staff to create a smooth transition from Catering At Its Best services to ChefStable Catering services. I also worked with Salt & Straw staff to develop a partnership and training procedures to offer their ice cream cart services at events.       This family run catering business excelled in making personal connections with clients and staff as well as developing clear procedures to ensure efficiency, safety, and quality experiences both for clients as well as team members. Clients ranged from corporate deliveries to high end weddings. I grew in my position from doing kitchen prep and serving, to leading event crews, to managing event sales and developing marketing materials. I ended up working closely with clients to understand their vision for events and clearly explain how our services would fit with realizing their goals. I collaborated with other event professionals to ensure a smooth flow of the event space and timing. I analyzed event tasks and assigned roles for our team members to ensure a smooth and successful event. While the food was always delicious and the organization ran like clockwork, what really stood out was all of the things that were less visible - ensuring the team members were supported with breaks and food; being thoughtful about waste by recycling plastic and donating to shelters; and , treating everyone with a deep respect and dignity from the dishwasher to the bartender.       These companies brought struggling youth out to a wilderness setting to gain a new perspective on themselves and their problems. Through offering therapeutic support in a challenging context, I was able to empower teenagers to be responsible for their own well being as well as provide them with new transferable tools to use when encountering problems. My day to day responsibilities varied from teaching wilderness skills like shelter building, fire starting, plant identification and navigating with a map and compass, to medical care like managing blisters or stabilizing injuries, to managing group and individual therapy sessions both in response to emotional tension of the moment as well as covering topics assigned by therapists. My most rewarding moments were witnessing the students passing on the skills and knowledge that they had gained. At Aspen the families joined the youth in a solo weekend together before they graduated. In a reversal of roles, teenagers would demonstrate to their parents how to make fire with a bow drill. At Sagewalk, students who had been in the program would often take on a mentoring role and end up leading the groups to share the tools that I had taught them. These moments really demonstrated how the efforts of my team paid off in creating a transformative experience for youth who had been struggling with a variety of issues. Show less
