I have been given the opportunity to help set up the first brewing diploma program in British Columbia. I will directly be involved in all lab (chemistry/biology/sensory) and practical (2hL Pilot Brewery) aspects. Responsible to deliver current and accurate information, demonstrations as well as supervision to students, to ensure all WHMIS guidelines are followed, to ensure the chemical, biological and brewing materials inventory is current and on budget. As the 2nd Brewer at Dead Frog Brewery, I am responsible for a number of different tasks. Brewing numerous types of beer, for Dead Frog, as well as for other contract brews, is perhaps the most obvious, however monitoring fermentation, yeast propagation, filtering, carbonation, cask conditioning and quality control are all part of the position. The other single largest part of being a brewer is the cleaning and sanitization process needed for all equipment, and work stations. This includes use of large quantities of both caustic and acidic chemicals.
