In August 2017, I was promoted to Assistant General Manager for this new venue opening. I actively participated in opening preparation and team selection alongside the following usual duties;- Duty Manager: regularly responsible for running the venue; opening and closing in line with regular licensing procedures, staff briefing, delegating duties and dealing effectively with any challenges which arise.- Menu: defining and costing the wine and cocktail menu ensuring a commercial yet trend driven selection, negotiating the best prices and training the team- Suppliers: selecting relevant suppliers, placing weekly orders, negotiating the best prices/margins and meeting regularly to review and maintain the relationship- Service: training and leading the team to deliver excellent service at all times- Commerciality: ensuring all opportunities to maximise sales are optimised- Stock: accountable for stock control and Gross Profit - Team: taking an active role in the recruitment, training and development for all team members
