I hired Mark to join our culinary team as we grew a unique kitchen to develop a revolutionary concept. Mark was always the team member who could be depended on to be on time, ready to face any challenge put in front of him. He demonstrated excellent culinary skills in every station. His butchering and meat trimming skills were obvious no matter what type of meat or cut he confronted. I recommend Mark for any culinary position when assembling a team of culinary professionals. He was being groomed to lead one of our future kitchens, but was sidelined when the concept was suddenly changed.
