Worked with Dr. Mirko Betti, on following 4 projects:1. Physicochemical and functional properties of gelatins extracted from poultry by-products;2. Preparation and characterization of gelatin from collagen biomass obtained through a pH-shifting process of mechanically separated turkey meat;3. Identification and evaluation of ice-inhibitory peptides from avian collagen in sucrose model systems;4. Collagen hydrolysate cryoprotection of natural actomyosin: mechanism studies during freeze-thaw cycles and simulated digestion. - Conducted proximate analysis on the raw materials and the obtained proteins; - Designed the experiments and analyses for the determination of protein/peptides properties and activities; - Tested the rheology and texture of protein gels by employing rheometer, TA and SEM; - Analyzed the molecular weight and amino acid profile of proteins; - Developed and optimized the methods for protein/peptides extraction and fractionation with HPLC and UPLC; - Measured the ice formation using an optical microscope and DSC; - Identified the active peptides by using LC-MS/MS and elucidated the secondary structures by Circular Dichroism. - Mastered protein/peptides database searching. - Collaborated with a visiting student from the Czech Republic in one project; - Trained students who want to use the HPLC, TA and rheometer in our lab.
