      Fall 2023- Graduate level Foodservice management lecture and lab; We are exploring the world of foodservice management with field trips, utilization of the professional kitchen, development of menus and designing kitchen space. I am also assisting in the development of personal statements and resume building for the Dietetic Interns at Meredith College. During the summer I participated in the RD2B program at Appalachian State being a mentor for dietetic intern students. Spring 2023- Graduate level class on Lifecycle Nutrition. We are exploring the human body and the function of nutrition from preconception to end of life. We are utilizing Journal Clubs, Case Studies and the Nutrition Care Process to explore nutrition in each life stage. Fall 2022- I taught a Food Service Management Class from the perspective of a previous foodservice director and the topics I encountered while in that role. I coordinated guest speakers- from a local Beekeeper, a food blogger and test recipe creator, to a local, start up juice business- to help these young minds understand the role of food service - and how there was a common thread of procurement, food safety and management of people. I’ve volunteered for 6 years developing, writing and reviewing the actual exam questions for both the National Dietetic Technician and the Certified Dietary Manager exams.
