As the General Manager of Gingergrass restaurant in Silver Lake, I was instrumental in taking this busy and successful neighborhood restaurant to the next level by implementing necessary systems and procedures in both FOH and BOH. During that time, I also implemented numerous environmentally responsible practices. Gingergrass eliminated Styrofoam, began a food scrap collection program, introduced water conservation and energy efficiency strategies, and exchanged cleaning products to incorporate Green Seal certified products. We identified ways to reduce waste and changed systems and procedures to allow for more sustainable operations.
