I am the general manager of a high-end 5-star lodge close to the Ngorongoro Crater, I am responsible for all the day to day management and operations of a lodge. With the main focus being on improving the food and beverage experience. Also, with a big focus on improving the operation structures and guidelines. I had the opportunity to manage two of the three Dulini lodges of which one is in the top 10 Safari Lodges in the world, both these lodges being 5 star and highly exclusive, one being a four-bedroom lodge and the other a six-bedroom lodge, with a staff compliment of 80 between the two as well as a huge BOH consisting of 2 staff villages, pilots rooms, a workshop and a massive hub section where all deliveries, food preparations, as well as dispatches from here to the 3 Dulini Lodges are orchestrated, I also deal with all procurement for the lodges and looking after the lodge owners house on the property. Dealing with everything that has to do with running a lodge, from daily operations of cleaning and maintaining the lodge, doing all the rooming and day sheets from Res Request, the checking in and out of guests, sorting out any guests and staff related issues.
