Initially on a consultancy basis, I drew up a Business Plan for launching the luxury chalet Ferme St. Christophe as a new business catering to the summer alpine and winter ski holiday market. On acceptance (by the property owners) of the Business Plan, I created and executed a Sales and Marketing campaign, a new website design and content upload and executed the role of Operations Manager encompassing accounts management, property management, supplier engagement and preparation for winter employee training. When offered a new position more suited to my extensive experience, I recruited and trained a couple who took over running the business. Show less

Part of a new management team bought in to turn the company around in 2018, I instigated a successful transition to French employment contracts and adherence to French working regulations for a team of 70 recruited for winter 2018-19. I successfully renewed fraught relationships with suppliers and property owners. I sourced all staff accommodation and agreed all property (chalets and staff accommodation) lease contracts. I managed all company-wide purchases, catering supplies, utility contracts and lift pass contracts. I ensured compliance with Restaurant License regulations, Food Safety & Hygiene legislation, Health & Safety, HACCP & COSHH and Fire regulations across the company. Show less

As Resort Manager I successfully lead a team of 16 to provide excellent standards of service, catering and cleanliness across 8 chalets in Morzine. I spearheaded the implementation of a pre-season training course, staff manual and associated documents specific to each job role for the company. I streamlined procedures to control costs, successfully ensuring spend was within budget by centralising purchasing of key ingredients and cleaning materials to reduce overspend, ensure no stock run-outs and minimizing the end of season stock levels, as well through conducting frequent stock checks in chalets and hands on supervision of chalet shopping. I ensured compliance with Restaurant License regulations, Food Safety & Hygiene legislation, Health & Safety, HACCP & COSHH and Fire regulations in resort. Show less

Brands and services included: Snowcrazy: The first chalet company to offer outdoor hot tubs in all chalets, we offered 6 luxury catered ski chalets in La Rosiere, Ste Foy, Meribel and Les Arcs with qualified Chefs, Hosts and Driver/Ski Guides. Skibug: Taking advantage of a different sector of the market, we created a budget brand offering 5 catered chalets in La Plagne, with the same high level of service and quality of catering as Snowcrazy. Skibug was sold in 2012. Snownation: Primarily targeting families and the British Military, we offered catered ski holidays in a previously dormant 72 bed hotel in La Rosiere with a licensed restaurant and apres-ski bar. I successfully turned the bar into the busiest bar in the resort. We installed and operated a commercial laundry and ski rental shop servicing our guests and several other tour operators. We also offered guided walking holidays from the hotel in summer. The Ultimate Chalet Host Cookery Course: We created and ran the pioneering and widely copied, industry leading 6-day chalet host cookery course for 9 summers. We trained budding chalet hosts on everything they needed to know to run a successful chalet with the minimum amount of fuss. The Alpine Fit Club: I created a luxury fitness holiday for ladies to get fit and lose weight operating in summer in Meribel. Mountain Bike Safari and Road Bike Safari: We created two cycling holiday brands, offering a 6 day itineraries of mountain climbs or descents in different resorts across the Tarentaise valley.
