  I typically start my day at 7:30 AM, and start it by preparing the dough for all the pitas for the day. I then roll them out into the pita shape, and place them in a cooler, so they can be thrown in the oven as needed. As soon as I'm done with that, I take over the grill, and make sure we have all the meats, grilled veggies, and kabobs stocked up at all times, and properly rotated. I also occasionally work the other half of the back line, which is baking pitas, and making falafels. When it is slow, and I'm all caught up, I do things like clean the back of house, take out trash, do dishes, prep food for the following day, and sometimes work the front line, which is greeting customers, and guiding them through choosing their dishes(it can be a little overwhelming for people who haven't had Mediterranean food before).
