I audited poultry facilities who sell their eggs in California, both in state and out of state. I examined their paperwork concerning testing and vaccination for Salmonella enteritidis as well as examined the space the birds were kept in to make sure they met California space requirements. When I wasn't inspecting the farms, I traveled to retail facilities in California to inspect the eggs. I looked for proper labeling, good egg quality, and made sure stores were not selling eggs past the date.
