      • Design and conduct heat penetration studies with a pilot or production retort, prepare equipment, and perform all associated product testing. • Collaborate with R&D on product development for new retort formulas and changes to existing formulas. • Work with process authority to obtain schedule processes and deviation evaluations. • Identify and assign quality and safety control parameters for retort formulas. • Collect and evaluate heat penetration data with CalSoft. • Review and evaluate thermal processing records to ensure proper processing of product in accordance with the schedule process and FDA/USDA regulations for LACF and acidified foods. • Submit LACF and acidified foods schedule processes to FDA for retort formulas. • Perform preventative maintenance on pilot retort (JBT and ALLPAX), Calplex data-logger, and Ecklund-Harrison thermocouples and wires. • Conduct annual retort audits. • Train and supervise R&D and QA personnel on safe and proper use of pilot retort. • Train production operators and QA staff on basic thermal processing, quality and safety concepts. • Work with cross-department problem solving teams to address quality and safety issues and implement improvements throughout the plant. • Act as back-up QA Technician. • Create, maintain and review food quality and safety evaluation forms used by QA Technicians, and follow-up with appropriate corrective actions. • Set-up and participate in daily sensory evaluations.
