Reviews and revises all menus in limited service and full service hotel restaurants on a semi-annual basis. Ensures all menu revisions meet AD1 GLOBAL and brand specifications. Conducts semiannual market surveys in all markets for hotels with banquet facilities to aid in the determination of future strategies. Adjusts menus as necessary to ensure market competitiveness. Monitors Food and Beverage service at all hotel properties. Performs regular on-site inspections of Food and Beverage operations for evaluation, training and support. Monitors kitchen staff efficiency, food production, speed of execution and quality of product. Determine and implement proper service recovery strategy. Responsible for overall accountability of expenses and optimizes profits by controlling food and liquor costs, production and labor to maximize profitability. Works with Food and Beverage Managers and General Managers to monitor inventories at all hotels. Makes recommendations as necessary to ensure proper par levels at hotels. Assumes the responsibility for recruiting, orienting and training food and beverage staff in pre-opening phase of new construction and acquisition of properties.
